THE DREADED FEIJOA SEASON.

It’s that time of year again... when everyone’s front yards, fruit bowls, and random shopping bags start mysteriously filling up with feijoas. Even if you don’t own a feijoa tree, somehow you end up with a mountain of them. All thanks to your well-meaning neighbours.

Love them or hate them, feijoas are here to stay for the next few months. Instead of letting them rot in a sad bowl on the bench (or worse, pretending you’re not home when someone rocks up with yet another bag), why not turn them into something delicious?

Try making a Feijoa Sponge Pudding, the easiest way to turn those weird little green grenades into pure pudding glory.

Feijoa Sponge Pudding Recipe

Serves: 4

Ingredients

  • 6–8 decent-sized feijoas
  • Butter (for greasing the dish)
  • 140g self-raising flour
  • 100g sugar
  • 1 tsp baking powder
  • 1 tsp ground cinnamon (optional but highly recommended)
  • 85g butter, melted
  • 1 egg, beaten
  • 200ml milk

Sauce

  • 120g brown sugar
  • 100ml boiling water

Method

  1. Preheat your oven to 180°C (fan bake). Grease a baking dish (22cm x 15cm).
  2. Halve your feijoas and scoop out the flesh. You can chop them up into smaller bite-sized pieces if you like. Then dump it evenly into the greased dish. 
  3. In a big bowl, mix together the flour, sugar, baking powder, and cinnamon.
  4. In another bowl or jug, whisk the melted butter, beaten egg, and milk together. Pour this into the dry ingredients and mix until it’s smooth and pourable.
  5. Tip the batter over your feijoas, making sure they’re nicely covered.
  6. In a heatproof jug, dissolve the brown sugar in the boiling water. Carefully pour this sugary goodness over the back of a spoon onto the batter (this makes the pudding sauce).
  7. Bake for about 45 minutes or until the top is golden and the middle is just set.
  8. Serve it warm with vanilla ice cream, whipped cream, or just straight out of the dish if no one’s looking.

Pro tip: If you’re drowning in feijoas, you can also scoop and freeze the flesh for future puddings, smoothies, or cakes.
